After a few weeks of sabbatical (read: traveling, packing, moving, unpacking, and recreating a home), I am officially in a new apartment and getting back into the routine of cooking and baking. I'm easing into the process and with the help of a big, hearty, home-cooked meal by my doting mother this weekend, I don't have anything too exciting to report from the kitchen (that I did myself).
Tonight's meal was quick and easy, my favorite kind: rib eye pan fried then broiled, paired with roasted vegetables (so roasted, they're crunchy...but not in the raw sense, in the crispy, flavorful sense...so, what I'm saying is this is an easy way to make vegetables delicious). And for dessert? Banana slices topped with a little PB and Nutella, frozen. Get after it.
I've shared an easy meat recipe before (rub with salt and pepper, let sit to room temperature, pan fry each side, then place pan into oven at 400 for ~15 minutes depending on the thickness of the cut). But here's an easy veggie recipe!
