I’ve been swamped at work lately…the holidays are fast approaching, 2013 is almost over (praise da’ lawd) and I can’t get to the finish line fast enough. In between wrapping things up in the office and literally wrapping things up as presents, I feel like I’ve barely had a moment to breath…let alone cook, or post for my 3 loyal followers (hi family!). Tonight, however, I decided I needed to take a minute and do what I love – bake. I found a new recipe – something quick to whip up, and an hour and half later I’m shoving my face full of toffee bars. As always, I’m feeling clear headed, full tummied, and ready to finish up the week.

3/4 cup of butter, softened
3/4 cup of packed brown sugar
1 1/2 cups of flour
10 oz tin of sweetened condensed milk
2 tbsp butter
12 oz bag of chocolate chips (I prefer semi-sweet)
1 1/3 cups of toffee bits (Heath crumbles are sold at most grocery stores in the baking aisle)
Cream together butter, sugar and flour until well blended and the mixture can stick together. Press into a 9x13 pan and bake at 350 degrees for 20-25 minutes or until golden brown. Let cool while preparing the filling.
Heat sweetened condensed milk and butter in a sauce pan, stir constantly over medium heat for 5-10 minutes until thickened. Spread over cooled base and reheat for 12-15 minutes in oven or until golden brown.
Sprinkle chocolate chips evenly across the top. Put back in the oven for 2 minutes (or longer) only until the chocolate looks soft and shiny. Use a spatula to spread the chocolate evenly across the sweetened condensed milk layer (almost like frosting a cake).
Sprinkle toffee bits over the chocolate once spread, press into chocolate.
Cool completely for easiest cutting/serving/consumption.
